doc: fix typo in GIT_ALTERNATE_OBJECT_DIRECTORIES

One file accidentally spelled GIT_ALTERNATE_OBJECT_DIRECTORIES with
REPOSITORIES instead of DIRECTORIES. Fix the typo.
